Welcome to the ultimate foraging and feasting nordic game dinner. We source wild harvested game meats, and exotic produce from around the world. We provide you with a menu that is ever changing; with an authentic “nose to tail” and “skin to fin” experience. By pairing our meats with seasonally farmed and raised organic vegetables, and only using day boat line caught wild fish, truly brings something special to the table. Using old fashioned and new cooking techniques such as: open fire,
smoking, curing, fermenting, and sous vide, truly elevate the flavors. Being an avid hunter and fisherman my whole life, gives me an understanding of what I want to incorporate into these dinners. I take pride in these products and honor them by utilizing them to the best of my culinary abilities. It is my pleasure to educate and bring a better understanding to the public about these dinners.
